Thallon is a high quality unripe olive oil, with a rich fruity flavor from unripe (green) olives of the variety Chondrolia of Chalkidiki , produced only by mechanical method at ambient temperature (27 degrees Celsius).
It is a natural olive juice, made from fresh and healthy early-harvest fruits.
Due to its high content of polyphenols, it has the health claim designation (health claim) , according to the European Regulation 432/2012 of EFSA (European Food Safety Authority) .
It has a rich fruity flavor, leaving a slightly bitter aftertaste and a slight burning sensation in the throat, due to the high content of the substances Oleocanthal and Oleasin , which have significant biological activity and have been attributed anti-inflammatory, antioxidant, cardioprotective and neuroprotective properties.
HEALTH CLAIM
THALLON olive oil is of a specific and limited harvest, while its packaging contains the chemical analysis as well as the HEALTH CLAIM certification of the production per year (during its production, it is all stored in a single tank, from where all samples are sent for analysis, certification, organoleptic tests and tasting competitions).
The olive groves are located in the region of Halkidiki, while the olive variety from which Thallon is produced is the Hondolia of Halkidiki , known worldwide for its quality and characteristic flavor.

ACIDITY
THALLON has a particularly low acidity below 0.3 (< 0.3) so it is classified in the category of premium extra virgin olive oils.
TASTE
THALLON olive oil has all the flavor characteristics of the Chondrolia variety of Chalkidiki, namely a rich fruity flavor with aromatic notes of grass, greens, pepper, tomato and a balanced bitter and spicy taste. It is recommended to be consumed raw in the morning or as an accompaniment to salads, boiled or grilled vegetables and grilled meat.
