Pine honey is the most significant category of Greek honey, as over 60% of the total production comes from pine trees.
It belongs to honeydew honeys and does not come from flower nectar, but from honeydew that develops on pine trees and is collected by bees, giving it a lower sweetness and a fuller, more balanced character.
