Pine honey is the most important category of Greek honey, as over 60% of total production comes from pine trees.
It belongs to honeydew honeys and does not come from flower nectar, but from honeydew that develops on the pine tree and is collected by bees, giving it a lower sweetness and a fuller, more balanced character.
